Svitlana Mykolenko

Senior Researcher

Dr. Svitlana Mykolenko is a Food Engineer, MSc in Grain Processing and Technology and PhD in Food Science. Her research field is focused on plant-based alternative proteins, gluten-free and healthy food products, bioactive compounds recovery to obtain functional food through bioprocessing, cold plasma treatment and valorization of food waste/by-products towards sustainability in the agri-food industry. Since 2019 she has been the head of the RD department of the Association of Amaranth Producers and Processors in Ukraine. She is currently a member of the working group of project design and development innovative prototypes of products and small-scale processing technologies in the COST Action 18101 “Sourdough biotechnology network towards novel, healthier and sustainable food and bioprocesses (SOURDOMICs)”. She has participated in 9 R+D+i projects with companies and public administrations in Ukraine. Currently she is a researcher at BETA Technological Center.
