Know N Cheese is a project that seeks to increase the competitiveness of micro-SMEs and SMEs in the traditional dairy and cheese sector in the northern and southern Pyrenees by generating new knowledge to train the sector and raise consumer awareness of the social and environmental sustainability of these productions.

To achieve this objective, a diagnosis of producers’ and consumers’ knowledge on the subject, tests to assess the impact of climate change on the technological properties of milk and food safety, and studies on how dairy production contributes to climate change will be carried out.

In addition, the effect of innovative practices and solutions to generate more sustainable production models will be investigated, and training based on the results obtained will be offered to the different actors in the dairy sector and to consumers in the northern and southern Pyrenees region.
